Mexican Wedding Cookies
Mexican wedding cookies are one of my mom’s favorite so she went on the hunt to find the perfect recipe. She decided to make the recipe one year for my birthday, and they were quite a hit. A couple weeks ago, my cousin got engaged, and this past weekend she had a brunch to celebrate her engagement. It was kind of a last minute thing so I wasn’t sure what I could bring her. After thinking for a bit I remembered this recipe, and I decided to give it a try. They came out delicious, and she later told me that everyone who tried them loved them.
These cookies have the perfect amount of sweetness, and the walnut flavor is not overpowering the taste. This recipe is very easy, and it doesn’t take a lot of time to make. They are also perfect for when you don’t have time to decorate cookies because all you need to do is cover them in powdered sugar.

Preheat oven to 350 degrees fahrenheit.
Sift flour, baking soda, and salt.
In a large bowl, beat butter and sugar until creamy.
Add egg and vanilla. Be until well mixed.
Gradually beat in flour mixture until just blended.
In a food processor pulse pecans with 3 tablespoons of confectioners sugar until very finely ground. Stir in pecans.
Use 1 teaspoon to measure dough and roll into balls about 1 1/2 inches apart onto a cookie sheet.
Bake cookies 13 to 15 minutes or until bottoms are browned and cookies are light golden. Let cool completely before coating with powdered sugar.
Coat each cookie with confectioners’ sugar.
