Mexican Wedding Cookies

These cookies call for the cookies to be rolled and covered in confectioners' sugar once they are cooled.

Ingredients

  • 2 3/4 c. All-purpose flour
  • 1/4 tsp. Baking Soda
  • 1/4 tsp. Salt
  • 1 c. Softened Butter
  • 3/4 c. Granulated Sugar
  • 1 ea. Egg
  • 1 tsp. Vanilla Extract
  • 1 1/2 c. Pecans
  • 3 Tbsp. Confectioners' Sugar (sifted)
  • 1 1/2 c. Confectioners' Sugar (sifted)

Instructions

  1. Combine flour, baking soda, and salt.

  2. In a large bowl, beat butter and sugar until creamy. Add egg and vanilla; beat until well mixed.



  3. Gradually beat in flour mixture until just blended.
  4. In a food processor pulse pecans with 3 tablespoons of confectioners sugar until very finely ground. Stir in pecans.
  5. Use 1 teaspoon to measure dough and roll into balls about 1 1/2 inches apart onto a cookie sheet.
  6. Bake cookies 13 to 15 minutes or until bottoms are browned and cookies are light golden. Let cool completely before coating with powdered sugar.
  7. Coat each cookie with confectioners' sugar.
