Churro Cupcakes
It seems like this year a lot of people are having Fiesta Theme Parties, and I’m loving it. When I tell you these cupcakes taste just like taking a bite into a churro I am not joking. Not only is the texture of this cupcake quite perfect, but the cinnamon and sugar topping make it taste like heaven. Also, adding the whipped frosting is just a bonus. Talking about it makes my mouth water. So, I’m hoping you will give this recipe a try because it does not disappoint, and I promise you, it will be well worth it.
Ingredients:
All-purpose Flour
Cake Flour
Baking Powder
Salt
Ground Cinnamon
Unsalted Butter
Granulated Sugar
Eggs
Vanilla Extract

For the cupcakes:
Preheat oven to 350 degrees fahrenheit. in a bowl, sift both flours, baking powder, salt, and cinnamon. Set aside.
In a separate bowl,cream butter and sugar until fluffy.
Add eggs one at a time, beating until all is incorporated.
Beat in vanilla.
Add flour mixture in three batches, alternating with two additions of milk and beat until well combines.
Fill each cupcake liner and bake for 18-20 minutes.
Let them cool completely before adding the sugar crunchy topping.
Churro Cupcakes
Ingredients
- 1 1/2 c. All-purpose Flour
- 1 1/2 c. Cake Flour
- 1 Tbsp. Baking Powder
- 1/2 tsp. Salt
- 1 Tbsp. Ground Cinnamon
- 1 c. Unsalted Butter, room temperature
- 1 3/4 c. Granulated Sugar
- 2 ea. Large Eggs
- 2 tsp. Vanilla Extract
- 1 1/4 c. Milk
Instructions

For Cinnamon Sugar Crunchy Topping
In a small bowl melt butter.
In a separate bowl, combine sugar and cinnamon.
Brush melted butter on top of cupcakes.
Dip into cinnamon sugar mixture.
You can leave them as is
Or you can add your favorite frosting. I topped mine with whipped frosting.
Cinnamon Sugar Crunchy Topping
Ingredients
- 4 Tbsp. Butter, melted
- 1/4 c. Granulated Sugar
- 1 tsp. Ground Cinnamon

In a small bowl melt butter.

In another bowl combine the sugar and cinnamon.

When cupcakes are coo,l brush melted butter on tops and dip into the cinnamon sugar mixture.
