Churro Cupcakes

Ingredients

  • 1 1/2 c. All-purpose Flour
  • 1 1/2 c. Cake Flour
  • 1 Tbsp. Baking Powder
  • 1/2 tsp. Salt
  • 1 Tbsp. Ground Cinnamon
  • 1 c. Unsalted Butter, room temperature
  • 1 3/4 c. Granulated Sugar
  • 2 ea. Large Eggs
  • 2 tsp. Vanilla Extract
  • 1 1/4 c. Milk

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Line muffin tins with paper liners.

  3. In a bowl, sift both flours, baking powder, salt and cinnamon. Set aside.

  4. In a separate bowl, cream butter and sugar until fluffy.

  5. Add eggs one at a time, beating until well incorporated.

  6. Beat vanilla.

  7. Add flour mixture in three batches, alternating with two additions of milk until well combined.

  8. Fill each cupcake liner and bake for 18-20 minutes.

  9. Let cool completely before adding cinnamon sugar topping.
