Apple Pie Cupcakes

I’m so happy to be posting this recipe just in time for the Holidays. These are always such a hit whenever I take them anywhere, and I’m sure you’ll love them too. These are moist with the most delicious apple filling, and topped with cinnamon frosting.  Give these a try on the Holiday season, and wow all your guests.

For the cupcakes I just made them out of the Betty Crocker Super Moist cake box in the flavor white. I followed the instructions that were on the box and the only thing I changed was the amount of eggs. Instead of 3 I only put 2 on the mix.

For filling:

Melt butter and cinnamon over medium heat.

Stir in apples, sugar and 1 1/2 tablespoons of water.Cook and stir occasionally for 4-6 minutes or until slightly softened.

In a small dish combine cornstarch and water. Add to pan while stirring and continue to cook until apples are soft not mushy, and filling has thickened. Cool completely.

Apple Pie Filling

This stovetop filling is so delicious and so easy to make.

Prep Time 5 minutes
Cook Time 7 minutes
Total Time 12 minutes

Ingredients

  • 2 Medium Apples
  • 1 1/2 TBSP Water
  • 1 TBSP Butter
  • 1/2 tsp Cinnamon
  • 2 TBSP 2 tsp Sugar
  • 2 tsp Cornstarch
  • 1 TBSP Water

Instructions

  1. Peel, core and cut apples into small cubes.

  2. Melt butter and cinnamon over medium heat. Stir in apples, sugar, and 1 1/2 tablespoons water.

  3. Cook and stir occasionally for 4-6 minutes or until very slightly softened.

  4. In a small dish combine cornstarch and water. Add to pan while stirring  and continues to cook until apples are soft (not mushy) and filling is thickened. Let bubble 1 minutes and cool.

For frosting:

Whip butter until fluffy.

Then add brown sugar, cinnamon, and vanilla until combined.

Gradually add powdered sugar and milk.

Cinnamon Frosting

This delicious cinnamon buttercream frosting is perfect for any cupcake.

Course Dessert

Ingredients

  • 1 c Whole Butter
  • 1/2 c Unsalted Butter
  • 4 1/2 c Powdered Sugar
  • 1 c Brown Sugar
  • 2 tsp Cinnamon
  • 3 TBSP Milk
  • 2 tsp Vanilla Extract

Instructions

  1. Whip butter until fluffy. Then add brown sugar, cinnamon and vanilla.

  2. Gradually add powdered sugar and milk.

  3. Transfer to piping bag and use 1M tip to decorate.

How to assemble cupcakes:

Cut center of each cupcake.

Add filling to each cupcake.

Cover each cupcake with a pie of cake.

Frost each cupcake with tip 1M and add sprinkles.
