Strawberry Jello Parfaits

The other day I had to make dessert for a luncheon, but it was so hot I didn’t feel like turning on the oven. Then, I remembered this recipe and decided to make it. I’m so glad I made these because they were a hit at the luncheon. Everyone liked them because they said it was a very fresh dessert, and it was perfect for this time of year.  What I also like about this recipe is that you can use any flavor of jello so if strawberry isn’t your favorite just use a different flavors. I have made them in different flavors and they all taste really good.On the plus side, this is dairy free so most people can enjoy them even if they are lactose intolerant.

Start by preparing the jello by following the package directions. Let it cool for about 10 minutes.

Measure out 2/3 cups of the jello and set aside.

Fill small cups 1/4 cup full. Makes about 14 cups. Put them in the refrigerator and let them set.

Take the 2/3 cup of jello and 2 cups of whipped topping and mix them together until they form a mousse like consistency and place it into the refrigerator.

Once the jello cups set take them out of the refrigerator as well as the mousse. Mix the mouse and put it in a ziplock or pastry bag and add the mousse on top of the set jello. Place them into the refrigerator for about 20 minutes and let it set.

Top off with more of the whipped topping, and you’re all done.

Keep them chilled until ready to eat.

Ingredients

  • 6 oz. Jello Package
  • 2 c. Hot Water
  • 2 c. Cold Water
  • 2 c. Whipped Topping ( I use Pastry Pride for a dairy free dessert)

Instructions

  1. Prepare Jello according to the package directions. Let cool for about 10 minutes.

  2. Set 2/3 cups aside.

  3. Fill small cups 1/4 cup full. Place in refrigerator and let them set.


  4. Fold 2/3 cups of jello and whipped topping until it looks like a mousse. Refrigerate until ready to use.


  5. After jello sets take a ziplock or pastry bag and fill with the mousse mixture and fill cups.


  6. Top with some more whipped topping on top.


  7. Keep them chilled until ready to serve
