Banana Bread

This is the best banana I've made, and I don't see myself changing this recipe. Go ahead, give it a try, and see for yourself.

Ingredients

  • 15 oz. All-Purpose Flour
  • 2.5 g. Baking Powder
  • 7 g. Baking Soda
  • 3 g. Salt
  • 1 lb. 6 oz. Bananas very ripe, unpeeled
  • 1 tsp. Lemon Juice
  • 15 oz. Sugar
  • 2 ea. Eggs
  • 4.67 oz. Vegetable Oil
  • 2.67 oz. Pecans, coarsely chopped (optional) I never add these but some people like them.

Instructions

  1. Preheat oven to 350 degrees fahrenheit.


  2. Coat two loaf pans with a light film of fat and flour or baking spray.


  3. Sift together the flour, baking powder, baking soda, and salt. Set aside.


  4. Peel and puree the bananas with the lemon juice.


  5. Combine the banana puree, sugar, eggs, and oil, and mix until blended.


  6. Add the sifted dry ingredients and mix until just combined. Mix in the pecans.


  7. Scale 1 lb. 14 oz. into each prepared pan. Gently tap filled pans to burst large air bubblesl.


  8. Bake at 350 degrees for about 40 minutes or until a toothpick comes out clean.


  9. Cool loaves and cut as desired.
