Banana Bread
Today I would like to show you my own personal banana bread recipe. I usually wouldn’t be baking much during this time of year because it has been so hot lately, but a lot of our bananas got ripe really quick before we got to eat them. So, instead of throwing them out I decided to go ahead and bake some banana bread. This recipe is my all time favorite because it is nice and moist, and has the perfect amount of banana flavor. This recipe makes 2 loaves, but you may also make muffins, and they would make a perfect to go snack.

- Bananas

You will begin by preheating the oven to 350 degrees fahrenheit. Then, coat two 9×5 inch loaf pans a light film of fat such as butter or lard and flour. You may also use baking spray if desired.
In a bowl, sift flour, baking powder, baking soda, and salt. Set aside.
Peel and pureed the bananas with the lemon juice.
In a separate bowl, combine the banana puree, sugar, eggs, and oil, and mix on medium speed until blended.
Add the sifted dry ingredients and mix until just combined. Mix in the pecans if you decide to add them.
Scale 1 lb. 14 oz. into each pan and bake for about 40 – 45 minutes or until toothpick comes out clean.

Cut however you’d like, and enjoy.

- 2.5 g. Baking Powder
- 7 g. Baking Soda
- 3 g. Salt
- 1 lb. 6 oz. Bananas very ripe, unpeeled
- 1 tsp. Lemon Juice
- 15 oz. Sugar
- 2 ea. Eggs
- 4.67 oz. Vegetable Oil
- 2.67 oz. Pecans, coarsely chopped (optional) I never add these but some people like them.
Instructions

Preheat oven to 350 degrees fahrenheit.

Coat two loaf pans with a light film of fat and flour or baking spray.

Sift together the flour, baking powder, baking soda, and salt. Set aside.
